Delicious mini cheesecakes with a pecan pie topping, made easily in an air fryer.
Ingredients

- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
- 1 tbsp brown sugar
Instructions
- Mix graham cracker crumbs and melted butter, press into lined muffin tin cups.
- Beat cream cheese, sugar, egg, and vanilla until smooth. Spoon over crusts.
- Combine pecans, maple syrup, and brown sugar. Spoon over cheesecake filling.
- Air fry at 300°F for 12-15 minutes until set. Cool before serving.
Notes
- Use room temperature cream cheese for smoother filling.
- Let cheesecakes cool completely for best texture.
- Store leftovers in the fridge for up to 3 days.
