A quick and easy air fryer version of the classic pineapple upside down cake. Perfect for small batches and ready in minutes.
Ingredients

- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- 2 tbsp melted butter
- 2 tbsp milk
- 1/4 tsp vanilla extract
- 2 pineapple rings
- 2 maraschino cherries
- 1 tbsp brown sugar
- 1 tbsp butter (for topping)
Instructions
- Preheat air fryer to 320°F (160°C).
- Mix flour, sugar, baking powder, and salt in a bowl.
- Add melted butter, milk, and vanilla. Stir until smooth.
- Place pineapple rings in the bottom of a greased cake pan.
- Add a cherry in the center of each ring.
- Sprinkle brown sugar over the pineapple.
- Dot with small pieces of butter.
- Pour batter over the pineapple.
- Air fry for 15-18 minutes until golden.
- Let cool for 5 minutes before flipping.
Notes
- Use a 6-inch cake pan that fits your air fryer.
- Check doneness with a toothpick.
- Serve warm with ice cream.
