A quick and easy air fryer version of the classic pineapple upside-down cake. Perfect for small batches with minimal effort.
Ingredients

- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- 2 tbsp unsalted butter, melted
- 2 tbsp milk
- 1/4 tsp vanilla extract
- 2 pineapple slices (canned or fresh)
- 2 maraschino cherries
- 2 tbsp brown sugar
- 1 tbsp butter (for topping)
Instructions
- Preheat air fryer to 320°F (160°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add melted butter, milk, and vanilla. Stir until smooth.
- Place pineapple slices in the bottom of a greased 6-inch cake pan.
- Add a cherry in the center of each pineapple slice.
- Sprinkle brown sugar and dot with butter over the pineapple.
- Pour batter evenly over the pineapple.
- Air fry for 20-25 minutes until golden and a toothpick comes out clean.
- Let cool for 5 minutes, then invert onto a plate.
Notes
- Use a pan that fits inside your air fryer basket.
- Check doneness at 20 minutes to prevent over-baking.
- For extra flavor, add a pinch of cinnamon to the batter.
