Ingredients

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Cut a deep slit lengthwise in the pork tenderloin to create a pocket for stuffing.
  3. Mix apricots, feta, and pistachios in a bowl. Stuff the mixture into the pork pocket.
  4. Rub the pork with olive oil, salt, pepper, and garlic powder.
  5. Place pork in the air fryer basket. Cook for 18-20 minutes, flipping halfway, until internal temperature reaches 145°F (63°C).
  6. Let rest for 5 minutes before slicing.
