Description
Crispy air fryer potato skins loaded with cheese, bacon, and green onions. A perfect appetizer or snack.
Ingredients

- 4 medium russet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, sliced
- 1/4 cup sour cream (optional)
Instructions
- Preheat air fryer to 400°F (200°C).
- Scrub potatoes and dry them thoroughly.
- Prick potatoes with a fork and rub with olive oil, salt, and pepper.
- Air fry potatoes for 35-40 minutes until tender.
- Let potatoes cool, then cut in half lengthwise.
- Scoop out most of the flesh, leaving 1/4-inch shell.
- Brush skins with olive oil and air fry for 5 minutes per side until crispy.
- Fill skins with cheese and bacon, then air fry 2-3 minutes until cheese melts.
- Top with green onions and sour cream before serving.
Notes
- Save the scooped potato flesh for mashed potatoes or another recipe.
- For extra crispiness, brush skins with melted butter before the second air frying.
- Substitute turkey bacon for a lighter version.
