Easy and delicious pumpkin muffins made in an air fryer.
Ingredients

- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat air fryer to 320°F (160°C).
- Mix pumpkin puree, sugar, oil, and egg in a bowl.
- Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until combined.
- Pour batter into muffin cups, filling each halfway.
- Place muffin cups in the air fryer basket.
- Cook for 12-15 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use silicone muffin cups for easy removal.
- Adjust cooking time based on your air fryer model.
- Store leftovers in an airtight container for up to 3 days.
