- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1 cup pumpkin puree
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup strong brewed coffee, cooled
- ¼ cup milk
Instructions
- Preheat air fryer to 320°F (160°C).
- In a bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, egg, oil, and vanilla extract.
- Stir in coffee and milk.
- Combine wet and dry ingredients until just mixed.
- Pour batter into muffin liners, filling each ¾ full.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use fresh pumpkin puree for best results.
- Adjust sweetness by reducing sugar if preferred.
- Store in an airtight container for up to 3 days.
