Ingredients

  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup pumpkin puree
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup strong brewed coffee, cooled
  • ¼ cup milk

Instructions

  1. Preheat air fryer to 320°F (160°C).
  2. In a bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, egg, oil, and vanilla extract.
  4. Stir in coffee and milk.
  5. Combine wet and dry ingredients until just mixed.
  6. Pour batter into muffin liners, filling each ¾ full.
  7. Air fry for 12-15 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Use fresh pumpkin puree for best results.
  • Adjust sweetness by reducing sugar if preferred.
