Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup shredded cheese (optional)
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 370°F (190°C).
  2. Cut the tops off the peppers and remove seeds.
  3. In a bowl, mix quinoa, black beans, corn, red onion, olive oil, garlic powder, cumin, salt, and pepper.
  4. Stuff the peppers with the quinoa mixture.
  5. Place peppers in the air fryer basket and cook for 12-15 minutes until tender.
  6. If using cheese, sprinkle on top and air fry for 1 more minute to melt.
  7. Serve warm.

  • Use any leftover quinoa for quicker prep.
