Description

These air fryer raspberry thumbprint cookies are a quick and easy treat. They are soft, buttery, and filled with sweet raspberry jam, making them perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup raspberry jam

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. In a bowl, cream butter and sugar until light and fluffy.
  3. Add egg yolk and vanilla extract, then mix well.
  4. Gradually add flour and salt, mixing until a soft dough forms.
  5. Roll dough into 1-inch balls and place them in the air fryer basket, spaced apart.
  6. Press your thumb gently into the center of each cookie to make an indentation.
  7. Fill each thumbprint with about 1/2 tsp raspberry jam.
  8. Air fry for 8-10 minutes or until the edges are lightly golden.
  9. Let them cool before serving.
