Ingredients

  • 1 medium eggplant, diced
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 red bell pepper, diced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, combine eggplant, zucchini, yellow squash, bell pepper, red onion, and garlic.
  3. Drizzle with olive oil and sprinkle with thyme, basil, salt, and black pepper. Toss to coat evenly.
  4. Transfer the vegetables to the air fryer basket in a single layer. Cook for 10 minutes.
  5. Shake the basket, add the diced tomatoes, and cook for another 10 minutes or until vegetables are tender.
  6. Garnish with fresh parsley before serving.
