- 1 medium eggplant, diced
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, diced
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine eggplant, zucchini, yellow squash, bell pepper, red onion, and garlic.
- Drizzle with olive oil and sprinkle with thyme, basil, salt, and black pepper. Toss to coat evenly.
- Transfer the vegetables to the air fryer basket in a single layer. Cook for 10 minutes.
- Shake the basket, add the diced tomatoes, and cook for another 10 minutes or until vegetables are tender.
- Garnish with fresh parsley before serving.

- Cut vegetables into even pieces for uniform cooking.
- Adjust seasoning to your taste.
- Store leftovers in an airtight container for up to 3 days.
