Description
A quick and healthy salad made with roasted carrots using an air fryer. Perfect as a side dish or light meal.
Ingredients

- 4 large carrots, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp honey
- 1/4 cup chopped parsley
- 1/4 cup crumbled feta cheese
- 1 tbsp lemon juice
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss the carrots with olive oil, salt, pepper, and paprika.
- Place the carrots in the air fryer basket in a single layer.
- Cook for 12-15 minutes, shaking halfway, until tender.
- Drizzle with honey and lemon juice.
- Sprinkle with parsley and feta cheese.
- Serve warm or chilled.
Notes
- Adjust seasoning to taste.
- Use goat cheese instead of feta for a different flavor.
