Description

A quick and healthy salad made with roasted carrots using an air fryer. Perfect as a side dish or light meal.


Ingredients

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp honey
  • 1/4 cup chopped parsley
  • 1/4 cup crumbled feta cheese
  • 1 tbsp lemon juice

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Toss the carrots with olive oil, salt, pepper, and paprika.
  3. Place the carrots in the air fryer basket in a single layer.
  4. Cook for 12-15 minutes, shaking halfway, until tender.
  5. Drizzle with honey and lemon juice.
  6. Sprinkle with parsley and feta cheese.
  7. Serve warm or chilled.
