Ingredients

- 1 lb small potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheese
- 1/4 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 2 tbsp sour cream
- 2 tbsp chopped cilantro
Instructions
- Boil potatoes until tender, about 15 minutes.
- Drain and let cool slightly.
- Place potatoes on a cutting board and gently smash each one with a fork.
- Brush with olive oil and season with salt and pepper.
- Air fry at 400°F for 10 minutes until crispy.
- Top with cheese, tomatoes, and jalapeños.
- Air fry for 2 more minutes to melt cheese.
- Drizzle with sour cream and sprinkle with cilantro.
