- 4 boneless, skinless chicken breasts
- 1 cup chopped spinach
- 1/2 cup chopped artichoke hearts
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix spinach, artichokes, cream cheese, Parmesan, garlic, salt, pepper, and Italian seasoning.
- Cut a pocket into each chicken breast, being careful not to cut through.
- Stuff each breast with the spinach-artichoke mixture.
- Brush chicken with olive oil and place in the air fryer basket.
- Cook for 15-18 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- Secure openings with toothpicks if needed.
- Check chicken doneness with a meat thermometer.
- Leftovers store well in the fridge for up to 3 days.
