Quick and easy breakfast pockets filled with spinach and feta, cooked in an air fryer.
Ingredients

- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat air fryer to 375°F (190°C).
- Roll out puff pastry and cut into 4 equal squares.
- Mix spinach, feta, olive oil, salt, and pepper in a bowl.
- Spoon filling onto one half of each pastry square.
- Fold pastry over filling and seal edges with a fork.
- Brush tops with beaten egg.
- Air fry for 10-12 minutes until golden brown.
- Serve warm.
Notes
- Use thawed puff pastry for best results.
- Adjust filling quantity to avoid overstuffing.
- Store leftovers in an airtight container for up to 2 days.
