Description
A quick and easy dessert made in the air fryer with fresh strawberries and rhubarb topped with a crispy oat crumble.
Ingredients

- 1 cup strawberries, sliced
- 1 cup rhubarb, chopped
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 tbsp cold butter, cubed
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix strawberries, rhubarb, granulated sugar, and cornstarch in a bowl.
- Transfer fruit mixture to an air fryer-safe baking dish.
- In another bowl, combine oats, flour, brown sugar, cinnamon, and butter.
- Use your fingers to rub the butter into the dry ingredients until crumbly.
- Sprinkle the oat mixture over the fruit.
- Air fry for 12-15 minutes until topping is golden and fruit is bubbly.
- Let cool slightly before serving.
Notes
- Adjust sugar based on sweetness of fruit.
- Serve warm with ice cream or whipped cream.
- Use gluten-free flour if needed.
