Description
A healthy and flavorful dish featuring bell peppers stuffed with quinoa and vegetables, cooked to perfection in an air fryer.
Ingredients

- 4 large bell peppers (any color)
- 1 cup cooked quinoa
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
Instructions
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix quinoa, black beans, corn, red onion, tomatoes, olive oil, cumin, paprika, garlic powder, salt, and pepper.
- Stuff the peppers with the quinoa mixture.
- Place peppers in the air fryer basket.
- Cook at 375°F for 12-15 minutes until peppers are tender.
- If using cheese, sprinkle on top and air fry for an additional 1-2 minutes.
- Serve warm.
Notes
- Use any color bell pepper for variety.
- For extra flavor, add diced jalapeños.
- Store leftovers in an airtight container for up to 3 days.
