Description

A healthy and flavorful dish featuring bell peppers stuffed with quinoa and vegetables, cooked to perfection in an air fryer.


Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Cut the tops off the bell peppers and remove seeds.
  2. In a bowl, mix quinoa, black beans, corn, red onion, tomatoes, olive oil, cumin, paprika, garlic powder, salt, and pepper.
  3. Stuff the peppers with the quinoa mixture.
  4. Place peppers in the air fryer basket.
  5. Cook at 375°F for 12-15 minutes until peppers are tender.
  6. If using cheese, sprinkle on top and air fry for an additional 1-2 minutes.
  7. Serve warm.

Notes

  • Use any color bell pepper for variety.
  • For extra flavor, add diced jalapeños.
  • Store leftovers in an airtight container for up to 3 days.
