- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/2 cup sweet and sour sauce
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup bell peppers, diced
- 1/2 cup pineapple chunks
Instructions
- Preheat the air fryer to 375°F (190°C).
- Season the chicken pieces with salt and pepper.
- Coat each chicken piece in cornstarch, then dip in beaten eggs.
- Place the chicken in the air fryer basket in a single layer. Lightly spray with oil.
- Air fry for 10 minutes, flipping halfway, until golden and crispy.
- In a bowl, mix the cooked chicken with sweet and sour sauce, bell peppers, and pineapple chunks.
- Air fry for an additional 2-3 minutes until heated through.
- Serve hot and enjoy.

- For extra crispiness, spray the chicken lightly with oil before air frying.
- Adjust the amount of sweet and sour sauce to taste.
- Use fresh or canned pineapple, depending on preference.
