Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 8 small corn tortillas
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 lime, cut into wedges
  • 1 avocado, sliced

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Air fry sweet potatoes for 12-15 minutes, shaking halfway, until tender.
  4. Warm black beans in a small saucepan or microwave.
  5. Heat tortillas in a dry skillet or microwave.
  6. Assemble tacos with sweet potatoes, black beans, red onion, cilantro, avocado, and a squeeze of lime.
