- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 8 small corn tortillas
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 lime, cut into wedges
- 1 avocado, sliced
Instructions
- Preheat air fryer to 400°F (200°C).
- Toss sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt.
- Air fry sweet potatoes for 12-15 minutes, shaking halfway, until tender.
- Warm black beans in a small saucepan or microwave.
- Heat tortillas in a dry skillet or microwave.
- Assemble tacos with sweet potatoes, black beans, red onion, cilantro, avocado, and a squeeze of lime.
Notes
- For extra flavor, add a dash of hot sauce.
- Store leftovers in an airtight container for up to 3 days.
- Swap corn tortillas for whole wheat if preferred.
