- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/4 cup sweet chili sauce (for dipping)
Instructions
- Preheat air fryer to 375°F.
- In a bowl, mix shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
- Dredge shrimp in flour, dip in beaten eggs, then coat with the coconut mixture.
- Place shrimp in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve with sweet chili sauce.
Notes
- Use fresh or frozen shrimp (thawed).
- For extra crispiness, spray shrimp lightly with cooking oil before air frying.
