- 1 lb chicken breast, sliced
- 2 tbsp Thai red curry paste
- 1 can (14 oz) coconut milk
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- Fresh basil for garnish
Instructions
- Marinate chicken with Thai red curry paste for 15 minutes.
- Preheat air fryer to 375°F (190°C).
- Place chicken in the air fryer basket and cook for 10 minutes.
- Add bell pepper and onion, then cook for another 5 minutes.
- In a bowl, mix coconut milk, fish sauce, brown sugar, and lime juice.
- Pour the sauce over the chicken and vegetables, then cook for 3 more minutes.
- Garnish with fresh basil before serving.
Notes
- Adjust spice level by adding more or less curry paste.
- Use tofu instead of chicken for a vegetarian option.
- Serve with steamed rice or noodles.
