Ingredients

  • 1 lb chicken breast, sliced
  • 2 tbsp Thai red curry paste
  • 1 can (14 oz) coconut milk
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • Fresh basil for garnish

Instructions

  1. Marinate chicken with Thai red curry paste for 15 minutes.
  2. Preheat air fryer to 375°F (190°C).
  3. Place chicken in the air fryer basket and cook for 10 minutes.
  4. Add bell pepper and onion, then cook for another 5 minutes.
  5. In a bowl, mix coconut milk, fish sauce, brown sugar, and lime juice.
  6. Pour the sauce over the chicken and vegetables, then cook for 3 more minutes.
  7. Garnish with fresh basil before serving.

Notes

  • Adjust spice level by adding more or less curry paste.
  • Use tofu instead of chicken for a vegetarian option.
