A healthy and flavorful dish made with ground turkey and colorful bell peppers, cooked to perfection in an air fryer.

- 4 large bell peppers (any color)
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped fresh parsley
Instructions
- Cut the tops off the bell peppers and remove seeds. Set aside.
- Preheat the air fryer to 375°F (190°C).
- Heat olive oil in a pan over medium heat. Cook onion and garlic until soft.
- Add ground turkey and cook until browned. Stir in quinoa, paprika, oregano, salt, and black pepper.
- Fill each bell pepper with the turkey mixture. Top with cheese if using.
- Place the stuffed peppers in the air fryer basket. Cook for 12-15 minutes until peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- Use any color of bell peppers for variety.
- Substitute quinoa with rice if preferred.
- For a dairy-free version, omit the cheese.
