A quick and nutritious breakfast burrito packed with veggies and cooked in an air fryer for a crispy finish.
Ingredients

- 2 large tortillas
- 4 eggs
- 1/2 cup black beans, drained and rinsed
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a pan, heat olive oil and sauté onions and bell peppers until soft.
- Add black beans and cook for 2 minutes.
- Whisk eggs with salt and pepper, then scramble in the pan with the veggies.
- Warm tortillas for 10 seconds in the microwave.
- Divide the egg and veggie mixture between the tortillas.
- Sprinkle cheese on top.
- Roll the tortillas tightly, tucking in the sides.
- Place burritos seam-side down in the air fryer basket.
- Cook for 5 minutes, flip, and cook for another 3 minutes until crispy.
Notes
- Use whole wheat tortillas for extra fiber.
- Add hot sauce for a spicy kick.
- Store leftovers in the fridge for up to 2 days.
