Description

A quick and nutritious breakfast burrito packed with veggies and cooked in an air fryer for a crispy finish.


Ingredients

  • 2 large tortillas
  • 4 eggs
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a pan, heat olive oil and sauté onions and bell peppers until soft.
  3. Add black beans and cook for 2 minutes.
  4. Whisk eggs with salt and pepper, then scramble in the pan with the veggies.
  5. Warm tortillas for 10 seconds in the microwave.
  6. Divide the egg and veggie mixture between the tortillas.
  7. Sprinkle cheese on top.
  8. Roll the tortillas tightly, tucking in the sides.
  9. Place burritos seam-side down in the air fryer basket.
  10. Cook for 5 minutes, flip, and cook for another 3 minutes until crispy.

Notes

  • Use whole wheat tortillas for extra fiber.
  • Add hot sauce for a spicy kick.
  • Store leftovers in the fridge for up to 2 days.
