Description
A quick and healthy fried rice packed with colorful vegetables and made in an air fryer for a crispy texture.
Ingredients

- 2 cups cooked and cooled rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers, corn)
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 eggs, beaten
- Salt and pepper to taste
- 1 green onion, chopped (for garnish)
Instructions
- Preheat your air fryer to 375°F (190°C) for 3 minutes.
- In a bowl, toss the cooked rice with soy sauce and sesame oil.
- Add mixed vegetables and minced garlic to the rice mixture and mix well.
- Spread the rice and vegetable mix in the air fryer basket.
- Cook for 8 minutes, stirring halfway through.
- Push the rice to one side and pour the beaten eggs into the other side. Cook for 2 more minutes until eggs are set.
- Mix everything together and season with salt and pepper.
- Garnish with chopped green onions before serving.
Notes
- Use day-old rice for better texture.
- You can add tofu or cooked chicken for extra protein.
- Adjust soy sauce to taste if needed.
- Store leftovers in an airtight container for up to 2 days.
