Description

A quick and healthy fried rice packed with colorful vegetables and made in an air fryer for a crispy texture.


Ingredients

Scale
  • 2 cups cooked and cooled rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers, corn)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 1 green onion, chopped (for garnish)

Instructions

  1. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  2. In a bowl, toss the cooked rice with soy sauce and sesame oil.
  3. Add mixed vegetables and minced garlic to the rice mixture and mix well.
  4. Spread the rice and vegetable mix in the air fryer basket.
  5. Cook for 8 minutes, stirring halfway through.
  6. Push the rice to one side and pour the beaten eggs into the other side. Cook for 2 more minutes until eggs are set.
  7. Mix everything together and season with salt and pepper.
  8. Garnish with chopped green onions before serving.

Notes

  • Use day-old rice for better texture.
  • You can add tofu or cooked chicken for extra protein.
  • Adjust soy sauce to taste if needed.
  • Store leftovers in an airtight container for up to 2 days.
