Crispy, spiced pumpkin pie cookies with walnuts, made easily in your air fryer.

- 1 cup pumpkin puree
- 1/2 cup chopped walnuts
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix pumpkin puree, egg, brown sugar, and vanilla in a bowl.
- Add flour, pumpkin pie spice, baking powder, and salt. Stir until combined.
- Fold in chopped walnuts.
- Drop spoonfuls of batter onto parchment paper in the air fryer basket.
- Cook for 8-10 minutes until edges are golden.
- Let cool before serving.

- Adjust sugar to taste.
