- 1 can (13.5 oz) coconut milk
- 1 cup fresh basil leaves
- 2 cups cooked rice
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
Instructions
- Heat olive oil in a pan over medium heat.
- Add ginger and garlic, sauté for 1 minute.
- Add chicken, turmeric, cumin, and coriander. Cook until chicken is browned.
- Pour in coconut milk, stir, and simmer for 15 minutes.
- Add basil leaves, cook for 2 more minutes.
- Serve over cooked rice.
