Ingredients

  • 2 large sweet potatoes
  • 1 lb ground turkey
  • 1 avocado, diced
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  3. In a skillet, cook ground turkey over medium heat until browned.
  4. Add onion and garlic, sauté until softened.
  5. Stir in black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Simmer for 10 minutes.
  7. Cut baked sweet potatoes in half and scoop out some to create space.
  8. Fill each sweet potato with turkey chili.
  9. Top with diced avocado, shredded cheese (if using), and cilantro.
