Ingredients

  • 1 pound beef stew meat, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Return beef to the pot. Add beef broth, barley, bay leaf, and thyme. Bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes or until beef and barley are tender.
  6. Season with salt and pepper. Remove bay leaf before serving.

Notes

  • For a thicker soup, simmer uncovered for the last 10 minutes.
  • Leftovers can be stored in the refrigerator for up to 3 days.
