Ingredients

- 3 medium carrots, peeled and chopped (about 2 cups)
- 3 large eggs
- 1 cup vegetable oil
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tbsp baking powder
- 1 pinch salt
- 1 tsp vanilla extract
- 1 cup chocolate chips or chopped chocolate for glaze
- 1/2 cup heavy cream for glaze
Instructions
- Preheat oven to 350°F (180°C). Grease a cake pan.
- Blend carrots, eggs, and oil in a blender until smooth.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Pour the carrot mixture into the dry ingredients. Stir until combined.
- Add vanilla extract. Mix well.
- Pour batter into the prepared pan. Bake for 40-45 minutes or until a toothpick comes out clean.
- For the glaze, heat cream until hot but not boiling. Pour over chocolate. Let sit for 2 minutes, then stir until smooth.
- Once the cake cools, spread the glaze on top.
Notes
- Use room-temperature eggs for better mixing.
- Do not overmix the batter to keep the cake light.
- Test doneness with a toothpick before removing from the oven.
