Ingredients

  • 1 lb boneless, skinless chicken breast, cubed
  • 1 package (16 oz) potato gnocchi
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chopped spinach (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat
  2. Add chicken cubes and cook until no longer pink (5-6 minutes)
  3. Stir in garlic and Italian seasoning, cook for 30 seconds
  4. Pour in heavy cream and bring to a simmer
  5. Add gnocchi and stir to coat
  6. Cover and cook for 5 minutes until gnocchi is tender
  7. Stir in spinach if using
  8. Sprinkle cheeses evenly over the top
  9. Cover and cook for 2 more minutes until cheese melts
  10. Serve immediately

Notes

  • Store leftovers in airtight container for up to 3 days
  • Reheat gently to prevent cheese from separating
