Ingredients

- 2 boneless, skinless chicken
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/4 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken, bell peppers, and onion with olive oil and fajita seasoning.
- Spread on a baking sheet and roast for 20-25 minutes until chicken is cooked.
- Slice chicken into strips.
- Divide rice, black beans, chicken, and vegetables into meal prep containers.
- Top with shredded cheese and cilantro.
- Store in the fridge for up to 4 days.
