  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup whole milk
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp instant coffee granules

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add the dry ingredients and the coffee-milk mixture to the butter mixture, starting and ending with the dry ingredients.
  5. Divide batter evenly among cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool.
  6. For the cream, whip heavy cream, powdered sugar, and instant coffee until stiff peaks form. Pipe onto cooled cupcakes.
