- 1/2 cup brown sugar

- 1 tbsp instant coffee granules
- 1/2 tsp baking soda

- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing well.
- Dissolve instant coffee granules in 1 tbsp of hot water and add to the mixture.
- In a separate bowl, combine flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until fully incorporated.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use high-quality instant coffee for a stronger flavor.
- For a chewier texture, slightly underbake the cookies.
