A warm and hearty chicken minestrone soup perfect for cozy nights.
Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 cup small pasta
- 1 can white beans (14 oz), drained
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and diced tomatoes. Season with oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add pasta and beans. Cook for 10 minutes or until pasta is tender.
- Stir in spinach and cook for 2 more minutes.
- Serve hot.
Notes
- Use gluten-free pasta if needed.
- Add more broth if the soup is too thick.
- Store leftovers in the fridge for up to 3 days.
