Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 cup small pasta
  • 1 can white beans (14 oz), drained
  • 1 cup fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  3. Add diced chicken and cook until no longer pink.
  4. Pour in chicken broth and diced tomatoes. Season with oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add pasta and beans. Cook for 10 minutes or until pasta is tender.
  7. Stir in spinach and cook for 2 more minutes.
  8. Serve hot.

Notes

  • Use gluten-free pasta if needed.
  • Add more broth if the soup is too thick.
