Ingredients

- 1 cup red lentils
- 1 onion, diced
- 2 carrots, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 tsp cumin
- 1/2 tsp turmeric
- 2 tbsp olive oil

Instructions
- Rinse lentils until water runs clear
- Heat oil in pot over medium heat
- Add onions and cook until translucent
- Stir in garlic, carrots, and spices
- Add lentils and broth
- Bring to boil then reduce heat
- Simmer for 20 minutes until lentils soften
- Season with salt and pepper
