Description
A warm and hearty braised chicken stew that brings comfort to family meals.
Ingredients

- 2 lbs chicken thighs, bone-in and skin-on
- 2 tbsp olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 garlic cloves, minced
- 2 cups chicken broth
- 1 cup dry white wine
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt and pepper, then brown them in the pot for 5 minutes per side. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
- Stir in garlic, tomato paste, and thyme. Cook for 1 minute.
- Pour in white wine and scrape the bottom of the pot to deglaze.
- Return chicken to the pot and add chicken broth and bay leaf.
- Bring to a simmer, cover, and cook on low heat for 45 minutes.
- Remove bay leaf before serving.
Notes
- Serve with crusty bread or mashed potatoes.
- Leftovers taste even better the next day.
- Use fresh herbs for garnish if available.
