Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup dry white wine
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt and pepper, then brown them in the pot for 5 minutes per side. Remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in garlic, tomato paste, and thyme. Cook for 1 minute.
  5. Pour in white wine and scrape the bottom of the pot to deglaze.
  6. Return chicken to the pot and add chicken broth and bay leaf.
  7. Bring to a simmer, cover, and cook on low heat for 45 minutes.
  8. Remove bay leaf before serving.

Notes

  • Serve with crusty bread or mashed potatoes.
  • Leftovers taste even better the next day.
  • Use fresh herbs for garnish if available.
