A warm and comforting chicken and sweetcorn soup perfect for cozy evenings.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup sweetcorn kernels
- 4 cups chicken broth
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook for 5 minutes until softened.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, sweetcorn, salt, pepper, and thyme.
- Simmer for 15 minutes.
- Optional: Mix cornstarch with 2 tbsp water and stir into the soup to thicken.
- Serve hot.
Notes
- Use leftover rotisserie chicken for convenience.
- Adjust seasoning to taste.
- Freezes well for up to 3 months.
