Description

A rich and creamy one-pot tomato pasta that’s easy to make and full of comforting flavors.


Ingredients

  • 12 oz (340g) pasta
  • 2 cups (480ml) water or vegetable broth
  • 1 can (14 oz/400g) crushed tomatoes
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) tomato paste
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until soft, about 3 minutes.
  3. Add minced garlic, basil, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Stir in tomato paste and cook for another minute.
  5. Pour in crushed tomatoes, water or broth, and pasta. Stir well.
  6. Bring to a boil, then reduce heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally.
  7. Once pasta is al dente, stir in heavy cream and Parmesan cheese.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh basil leaves if desired.
  10. Serve warm.

Notes

  • Use any short pasta shape like penne or rigatoni.
  • For extra richness, stir in a tablespoon of butter at the end.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
