  • 1 cup orzo pasta
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, add onion and mushrooms. Cook until softened, about 4-5 minutes.
  3. Add garlic and thyme, cook for 1 minute until fragrant.
  4. Stir in orzo, chicken broth, and heavy cream. Bring to a simmer.
  5. Return chicken to the skillet. Cover and cook for 10-12 minutes, stirring occasionally, until orzo is tender.
  6. Stir in Parmesan cheese. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.
