- 2 cups cooked chicken, shredded
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 cup heavy cream
- Salt and pepper to taste
- Tortilla strips for garnish
- Fresh cilantro for garnish
- Sour cream for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, and paprika.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add shredded chicken and heavy cream. Simmer for 5 more minutes.
- Season with salt and pepper.
- Serve hot, garnished with tortilla strips, cilantro, and sour cream.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust spice levels by adding more or less chili powder.
- Store leftovers in an airtight container for up to 3 days.
