  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro for garnish
  • Sour cream for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, and paprika.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add shredded chicken and heavy cream. Simmer for 5 more minutes.
  6. Season with salt and pepper.
  7. Serve hot, garnished with tortilla strips, cilantro, and sour cream.
