Ingredients

  • 200g feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • Fresh parsley for garnish
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, combine cherry tomatoes, garlic, olive oil, oregano, black pepper, and red pepper flakes.
  3. Bake for 10 minutes until tomatoes soften.
  4. Add feta cheese to the center of the dish and bake for 5 more minutes.
  5. Make 4 small wells in the feta and crack eggs into them.
  6. Bake for 10-12 minutes until eggs reach desired doneness.
  7. Garnish with fresh parsley before serving.
