- 1 lb (450g) potato gnocchi
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook gnocchi according to package instructions, then drain.
- Heat olive oil in a pan over medium heat. Add garlic and cook for 30 seconds.
- Pour in heavy cream and broth. Stir in Italian seasoning, salt, and pepper.
- Add spinach and sun-dried tomatoes. Cook until spinach wilts.
- Mix in cooked gnocchi. Transfer to a baking dish.
- Top with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes until cheese melts and turns golden.
Notes
- Use fresh gnocchi for best texture.
- Substitute half-and-half for a lighter version.
- Add cooked chicken or mushrooms for extra protein.
