Description
Crispy air fryer arancini made from leftover risotto, filled with gooey mozzarella, and coated in breadcrumbs for a delicious snack or appetizer.
Ingredients

- 2 cups leftover risotto
- 1/2 cup shredded mozzarella cheese
- 1 egg
- 1/2 cup breadcrumbs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil (for brushing)
Instructions
- Preheat air fryer to 375°F (190°C).
- Shape leftover risotto into small balls, about 2 inches in diameter.
- Press a small piece of mozzarella into the center of each ball and reseal.
- Beat the egg in a small bowl.
- Dip each risotto ball into the beaten egg, then roll in breadcrumbs.
- Place arancini in the air fryer basket, leaving space between each.
- Lightly brush with olive oil.
- Air fry for 10-12 minutes, flipping halfway, until golden and crispy.
- Serve warm with marinara sauce.
Notes
- Use cold risotto for easier shaping.
- Add herbs like parsley or basil for extra flavor.
- Replace mozzarella with cheddar for a different taste.
