Description

Crispy air fryer arancini made from leftover risotto, filled with gooey mozzarella, and coated in breadcrumbs for a delicious snack or appetizer.


Ingredients

  • 2 cups leftover risotto
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Shape leftover risotto into small balls, about 2 inches in diameter.
  3. Press a small piece of mozzarella into the center of each ball and reseal.
  4. Beat the egg in a small bowl.
  5. Dip each risotto ball into the beaten egg, then roll in breadcrumbs.
  6. Place arancini in the air fryer basket, leaving space between each.
  7. Lightly brush with olive oil.
  8. Air fry for 10-12 minutes, flipping halfway, until golden and crispy.
  9. Serve warm with marinara sauce.
