A quick and easy air fryer breakfast burrito that turns out crispy on the outside and packed with flavor inside.


Ingredients

  • 2 large flour tortillas
  • 2 eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup cooked black beans
  • 1/4 cup diced bell peppers
  • 2 tbsp diced onions
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Heat olive oil in a pan over medium heat and sauté onions and bell peppers until soft.
  4. Add the eggs to the pan and scramble until fully cooked.
  5. Lay out the tortillas and evenly distribute the scrambled eggs, black beans, and cheese.
  6. Fold the sides of the tortillas inward and roll tightly to form burritos.
  7. Place the burritos in the air fryer basket, seam-side down.
  8. Cook for 5-7 minutes, flipping halfway, until golden and crispy.
  9. Serve immediately.
