Ingredients

- 2 large flour tortillas
- 2 eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup cooked black beans
- 1/4 cup diced bell peppers
- 2 tbsp diced onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, whisk the eggs and season with salt and pepper.
- Heat olive oil in a pan over medium heat and sauté onions and bell peppers until soft.
- Add the eggs to the pan and scramble until fully cooked.
- Lay out the tortillas and evenly distribute the scrambled eggs, black beans, and cheese.
- Fold the sides of the tortillas inward and roll tightly to form burritos.
- Place the burritos in the air fryer basket, seam-side down.
- Cook for 5-7 minutes, flipping halfway, until golden and crispy.
- Serve immediately.
