- 1 medium eggplant, sliced into 1/2-inch rounds
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant into rounds and pat dry with paper towels.
- In a bowl, toss eggplant slices with olive oil, salt, garlic powder, paprika, and black pepper.
- Arrange slices in a single layer in the air fryer basket.
- Cook for 10 minutes, flip slices, then cook for another 8-10 minutes until crispy and golden.
- Remove and serve immediately.
Notes
- For extra crispiness, spray lightly with cooking oil before air frying.
- Store leftovers in an airtight container for up to 2 days.
- Serve with marinara sauce or yogurt dip.
