Ingredients

- 1 lb ground beef
- 1 tbsp taco seasoning
- 1/2 cup shredded cheddar cheese
- 12 small flour tortillas
- 1 tbsp olive oil
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add onions, bell peppers, taco seasoning, salt, and pepper. Cook for 3-4 minutes.
- Remove from heat and stir in shredded cheese.
- Spoon filling onto tortillas and roll tightly.
- Place taquitos seam-side down on a baking sheet. Brush with olive oil.
- Bake for 15-20 minutes until golden and crispy.

- Use corn tortillas for a gluten-free option.
- Serve with salsa, guacamole, or sour cream.
