Ingredients

- 1.5 lbs potatoes, diced
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 425°F
- Toss potatoes with oil and mustard
- Add seasonings and mix well
- Spread on baking sheet
- Roast 30-35 minutes until crispy
- Flip halfway through cooking
Notes
- Use Yukon Gold potatoes for best results
- Don’t overcrowd the baking sheet
