- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 smoked ham hock or 1 cup diced ham
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak overnight.
- Drain the peas and add them to the crockpot.
- Add water, onion, garlic, bell pepper, ham hock, salt, black pepper, paprika, and bay leaf.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf and ham hock before serving.
Notes
- Soaking the peas overnight reduces cooking time.
- Adjust seasoning to taste.
- Serve with rice or cornbread.
