Instructions
- Line a baking dish with parchment paper.
- Toast pistachios in a dry pan for 3-4 minutes until fragrant.
- In a saucepan, combine sugar, honey, and water. Heat over medium heat until sugar dissolves.
- Bring to a boil and cook until the syrup reaches 300°F on a candy thermometer.
- Remove from heat, stir in butter, vanilla, and salt.
- Quickly fold in toasted pistachios.
- Pour mixture into the prepared dish and press evenly.
- Let cool completely before cutting into bars.
