- 1 large sweet potato (about 1 cup mashed)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 unbaked pie crust (9-inch)
Instructions
- Peel and cube the sweet potato. Boil until tender, then mash.
- Preheat your air fryer to 320°F (160°C).
- In a bowl, mix mashed sweet potato, sugars, cinnamon, nutmeg, and salt.
- Beat in eggs, evaporated milk, and vanilla until smooth.
- Pour the filling into the unbaked pie crust.
- Place the pie in the air fryer basket. Cook for 35-40 minutes until set.
- Let cool before serving.
Notes
- Use a fork to check if the pie is done—it should come out clean.
- Adjust cooking time based on your air fryer model.
- For extra crispiness, brush the crust with egg wash before baking.
