- 1 tbsp taco seasoning
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup corn kernels
- 1 tbsp olive oil
- 8 small tortillas
- 1 cup shredded cheese
- 1/2 cup salsa
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F.
- Toss bell pepper, onion, and corn with olive oil on a sheet pan.
- Roast vegetables for 15 minutes.
- Add ground beef and taco seasoning to the pan.
- Cook for another 10 minutes until beef is browned.
- Warm tortillas in the oven for 2 minutes.
- Assemble tacos with beef mixture, cheese, salsa, and cilantro.
